Wedding Day Highlights: It didnt take long for Jennifer and Eric to realize that one secret to a good marriage is compromise. While Jennifer envisioned a traditional wedding reception, Eric preferred a casual outdoor celebration. So, they decided to do both. Following a ceremony on the beach in Santa Cruz, they had a lovely sit-down dinner for their immediate families. The next day, they held an informal picnic with friends, complete with a cookout, games and fun. Best of all, they did it all on a budget (with minimal consumerism) and even registered at the I Do Foundation, allowing guests to donate directly to the couples charity of choice, the Elephant Sanctuary.
Their Story: When Jennifer and Eric met seven years ago while working at the University of Maryland, they were both vegetarian, but transitioned to veganism together about five years ago. Since veganism is an important part of their lives, it was a priority that their wedding reflect their values. They also served locally grown produce and organic beer at their reception. Instead of a traditional wedding cake, they had five cakes of different flavors for guests to choose from, which the couple says was a big hit.
